Slow Jam Coffee is back β andΒ itβsΒ as groovy as ever.Β
Β
Β IfΒ youβreΒ looking for aΒ specialty coffee from GuatemalaΒ that pushes the boundaries of flavor and processing, Slow Jam delivers a truly memorable experience. This light-roasted coffee opens with bright notes of tart strawberry jam, layered with hibiscus and pomegranate. It finishes with a vibrant tropical acidity that keeps you coming back for more.Β
But what really makes Slow Jam special goes far beyond the cup.Β
Β
Slow Jam is the result of years of innovation by the team at Finca San JerΓ³nimo Miramar (FSJM), one of our long-time origin partners in Guatemala. Over the course of three harvest seasons, they developed a proprietary process that blends elements ofΒ washed and natural coffee processing methodsΒ into something entirely new.Β
Unlike traditional processing β where coffee cherries areΒ depulpedΒ before fermentation β Slow Jam coffee cherries are placed directly into fermentation tanks. This allows the fruit to develop a rich,Β jammyΒ character as the mucilage transforms during fermentation.Β
To preserve these delicate flavors, FSJM created a customΒ depulpingΒ method that removes the outer layer without water,Β maintainingΒ the integrity of the fruit-forward profile. The result is a coffee that combines the clarity of washed coffee with the sweetness and complexity of natural processing.Β
